Vizcaya Cuisine:
Biscay offers some of the best traditional dishes in the Basque Country. The local cuisine is similar to the rest of the region's. The pleasure alone of tasting its ancestral recipes is reason enough to visit this province. Biscayan cuisine stands out for its simplicity and its variety. Fish is the star of Basque cuisine in general and of Biscayan cuisine in particular.
Try the excellent Biscayan-style eel, red bream (lightly fried, then baked), baked sardines, Basque-style hake from Bermeo, anchovy casserole and bonito from the North. In addition, Biscay is the best place in Spain for cod, with a myriad of different recipes to prepare it, such as Biscayan-style cod, baked, fried, peasant-style, (with oil, garlic and peppers) and in a kind of soup called 'zurrukutuna', which is baked after it is done to concentrate the flavour of the cod.
About the Area
Bilbao is the heart of a metropolis with a population of more than a million people. It is the driving force of social and economic development and it is the main factor in the modernisation of the Gulf of Biscay. Ambitious architectural and general infrastructure projects have fuelled the urban and financial regeneration of the city.
The Guggenheim Museum; the Euskalduna Concert Hall and Convention Centre; the underground, built by Norman Foster; the airport, built by Calatrava; the new tram and projects by architects such as Arata Isozaki and Cesar Pelli are all examples of the overwhelming vitality that permeates Bilbao. Situated in the Territory of Bizkaia, the city is surrounded by fertile landscapes, with forests, mountains, beaches, and steep coasts, which make Bilbao an excellent destination for any traveller.
The modern network of transport and roads brings the nearby Basque capitals like Vitoria and San Sebastian much closer.
